During the Kentucky State Fair of 2016, the idea of Taco Holler was birthed. Brandon Pennington and I share a mutual love of tacos and began thinking of what a mountain taco (Appalachian Hand Sandwich) would consist of. We acknowledged that the Appalachian people are resourceful people and their tacos would be simple, healthy, and delicious. The idea sat dormant for almost a year, until my dear friend, Robert Gipe, met with Kristin Smith and invited me to eat at the Wrigley.
After that, Taco Holler became real. With love, patience, research and hard work, Taco Holler has finally come together and we’re happy to serve you!
